One of my biggest dreams for downtown Corvallis is coming true… we’re getting a top notch burger bar complete with housemade fries and milkshakes! Kinda like our own Pop’s with updated decor and less crime and teenage drama (Riverdale, anyone?). I grew up in a town that had a burger joint and I love that my kids get to have a similar experience with our newest locally-focused small business addition, Bo & Vine Burger Bar.
Last night I had the opportunity to go to Bo & Vine for their ‘Family and Friends’ night, which is like a trial run that many food/drink oriented businesses do before their official opening. A way to work out all the kinks and make sure that you’re good to go for the general public. I’ve been to similar events before and have to say that I was so impressed with their crew! They were absolutely slammed but all smiles and and so kind. The space itself was modern and clean, donned with a Corvallis mural and changing diner lights that showcase all the colors of the rainbow. We kept on trying to figure out if there was a rhyme or reason to them, something I’ll have to investigate a little further next time I’m there!
Our friends, Hilary and Craig, came with us and we tried to get a range of food to get the full experience. You guys, it was sooo good! I had a burger called the “Willamette” that had goat cheese crumbles, smoked bacon, housemade chili sauce, caramelized onion, balsamic reduction, and spring mixed lettuce on it. And yes, it was as messy as it sounds but so worth it! The burger itself was grilled just right, I’m a medium-rare kinda of girl and this was juicy and flavorful, not dry in the least. We also got a few different kinds of the hand-cut fry piles, my favorite was the bacon ranch! Yum, right? And because we were already going all out, we decided to top it off with a Cold Brew Mocha Milkshake, complete with yours truly Bespoken Coffee Roasters Cold Brew! So stoked that they asked us to provide the coffee for this delicious shake, love that they’re trying to keep everything local!
I could write all day about my experience but suffice it to say, I highly recommend Bo & Vine! Excited that they chose Corvallis as their second location and appreciate that they are getting involved in our community, instead of just treating it as an extension to their original Salem one. And as one downtown small businesses owner to another, I’m happy to say welcome to the neighborhood guys!
